The grand unveiling took place on February 10, 2024, graced by the presence of esteemed dignitaries including H.S.H. Prince Albert II, Stéphane Valeri, Deputy Chairman of Monte-Carlo Société des Bains de Mer, Frédéric Darnet, Managing Director of Monte-Carlo Bay Hotel & Resort, and the visionary Chef Marcel Ravin. This momentous occasion marked the culmination of Chef Ravin's lifelong dream, a testament to his unwavering dedication to culinary excellence.

Elevating beyond mere gastronomy, Blue Bay Marcel Ravin embodies a harmonious fusion of cuisine and ambiance, enhancing both the dining experience and service. La Table de Marcel, an exclusive enclave within the restaurant, offers an intimate setting for eight discerning guests, providing a personalized and elevated culinary journey.

Inspired by the vibrancy of life and the allure of the Caribbean, the new Blue Bay Marcel Ravin embraces an organic design concept rooted in the five elemental forces of nature: fire, earth, metal, water, and wood. This holistic approach infuses every aspect of the restaurant, from the intricate woodwork to the play of light and shadows, creating an immersive dining environment that reflects Chef Ravin's cultural heritage and global travels.

The revamped menu introduces an array of tantalizing dishes, including signature creations such as the "Monte-Carlo egg" infused with cassava truffle maracuja and the nostalgic "Chocolate of my childhood in Martinique." New additions like the "Chicken Madras 'Boucan d’Enfer'" and the sumptuous "Lovely lobster dumpling" promise to delight the palate with their bold flavors and innovative combinations.

In addition to culinary delights, Blue Bay Marcel Ravin unveils a bespoke rum crafted in collaboration with Maison Clément, offering connoisseurs a unique tasting experience. La Table de Marcel, nestled at the heart of the restaurant, invites guests to embark on a sensory journey inspired by the five elements, curated by Chef Ravin himself.
